Recipe for 4 persons (3 eggplant slices per person)
150g green lentils
1 chopped red onion
3 tablespoons parsley, chopped
White vinegar
Sea salt and pepper
100ml Organic Extra Virgin Olive Oil
2 medium size aubergines
4 crushed paximadia or organic breadcrumbs
2 whipped eggs
50g flour
150g Feta cheese
Cook the lentils in plenty of water until they get tender, but not for to long as they might lose their texture. Pour out the water and mix the lentils with the onions, parsley, olive oil, sea salt and pepper. Stir.
Cut the eggplant into approximately 1 cm slices and place them in a bowl of water with a touch of white wine vinegar and sea salt for 10 minutes. Heat a frying pan on high heat with plenty of olive oil. Squeeze out the excess water from the eggplant. Garnish by dipping the eggplant slices, one by one, firstly into the flour, continue with the eggs and finally cover the eggplant slices with the crushed Paximadia/breadcrumbs. Fry the eggplants in the pan until both sides become golden. Place them on a plate and crumble the Feta cheese between the slices. Serve with the lentil-salad next to the eggplants and enjoy!
Yiannis Tsivourakis has in cooperation with Konstantine’s developed healthy and tasty recipes where he has been given free hands to do a crossover between basic foods from Crete with ingredients you find in Scandinavia. The result is an exciting new branch of cooking where the South and North Europe meets and where playfulness, simplicity and product quality are in focus.
Yiannis career choice was heavily influenced by his childhood; he grew up in a rustic mountain village just
outside of Chania. As the son of a local food producer, Yiannis learned about the Cretan diet and cooking from his early days. The family had their own stone press, which yearly provided them with golden olive oil from their Koroneiki-olives. As Yiannis took part in every aspect of the production he quickly learned the secrets of good healthy food and how to use different ingredients. After graduating cooking school, Yiannis worked with famous French chefs at renowned hotels, both abroad and in Greece. Since 2003, Yiannis is the Chef De Cuisine
at the five-star luxury hotel Minoa Palace, just outside Chania. Besides his daily work at the Minoan Palace, Yiannis is a familiar face from TV, where he participates in cooking-shows both in Greece, as well as in the Gulf-states. Recipe for 2 persons
250g peeled prawns
1 ripe medium sized avocado
1 large vine-ripened tomato
1 teaspoon chopped parsley
60ml Organic Extra Virgin Olive Oil
½ lemon (lemon juice)
Sea salt, pepper and Peruvian pepper
100g drained / filtered Greek yogurt
80g whipped cream
Peel and clean the prawns carefully. Prepare a marinade by mixing 30ml of the olive oil and half of the lemon juice in the recipe. Add as much pepper and pink pepper as you prefer and add a pinch of sea salt. Course chop the prawns and marinate them, place in the fridge for 2 hour.
Cut the avocado into small cubes and place them in a bowl. Cut thick slices of the tomatoes outer fruit (not all the way to the core) and then cut them into cubes. Mix them together in a bowl with parsley, the remaining olive oil, lemon juice, sea salt and pepper. Next, add the yogurt and cream together in a new bowl, mix it well. Serve in a cocktail glass or a glass with rounded shape (8cm high). Start with the tomato and avocados in the bottom followed by the prawns and then the yogurt/cream on top. Add a few drops of olive oil on top and enjoy!
Recipe for 2 persons
2 x 160g salmon fillets
Sea salt and Pepper
5 cl Organic Extra Virgin Olive Oil
6-8 pieces of small potatoes
150g fresh Green beans
1 medium vine-ripened tomato
1 lemon
1 tablespoon of dill
2 tablespoons chopped spring onions (or chives)
7cl olive oil Organic Extra Virgin Olive Oil
Sea salt and pepper
Marinate the salmon in a mix of olive oil, sea salt and pepper.
Cut thick slices of the tomatoes outer fruit (not all the way to the core) and then cut them into cube forms, place them in a bowl. Peel the lemon and squeeze out the lemon juice into the bowl. Add the rest of ingredients of the salsa and mix them together.
Start by washing the potatoes, then boil them until they get soft. Rinse and wash the green beans, then boil them for a few minutes but not to long as they might lose their texture. Place two cuts on each side of the potatoes that crosses each other in the middle. Roast them in a pan with olive oil, the green beans, sea salt and pepper for a couple of minutes. Steam the salmon for about 12 minutes and serve it on a plate together with the potatoes, green beans and salsa.

The Cretan diet is basically the same diet that served as a model for what has become known as the “Mediterranean diet”. During the 1950s and 1960s, large-scale studies were made on the diet, mainly because men in Crete had the lowest percentage of heart disease and longest lifespan in the world (at that time, only men were included in the study). Today, the public has a tendency to associate the Mediterranean diet with almost every country around the Mediterranean, but the Cretan diet is particularly representative.
The traditional diet of Crete has a base consisting of big amounts of fresh vegetables, fruit and olive oil followed by wild plants, nuts, berries, whole grains, oily fish, snails, dairy products from sheep/goat milk and last but not least, red wine. Cretans eat limited amounts of red meat and choose their produce by the season. Other important factors in the Cretan way of life, and for contributing to their longevity, is the fact that working out is a natural part of every day life at Crete, as well as social gatherings around the meals. The Mediterranean
diet has been found to have several health benefits. The first studies focused on its positive effects for the heart, but further extensive research has concluded that it has other health benefits as well. It has been suggested that it lowers the risk of diabetes, metabolic diseases and cancer. In addition to the positive physical effects of the Mediterranean diet, it also seems to contribute to the mental well being, with fewer depression symptoms and improved memory.
You can follow a modified version of the Mediterranean diet anywhere in the world by sticking to the basic principles; Eat less meat, and if you do eat it, choose only organic meat. Eat fresh local organic products and choose products by the season. Let vegetables be your main source of nutrition followed by fruits, nuts, legumes, whole grains, wild plants and oily fish. You can choose to fast a couple of times each year, with the avoidance of all animal products. Choose fresh fruit as your snack or dessert and have a glass of red wine now and then. Use organic extra virgin olive oil as your primary fat source in all your cooking. Last but not least, to add up years to your life, walk long distances daily and make all meals a natural meeting place for you and your loved ones!

Our organic Extra Virgin olive oil comes from a small family farm close to Kastelli on Western Crete. The secret behind the taste of Konstantine’s olive oil is part due to the harvest of the excellent Koroneiki olives, which is done gently by hand during early November. The other part is due to the olives being immediately pressed very close to the harvest. Our olive oil is then left to mature for about a month before it is bottled and shipped to Sweden.
